Tonight’s Not My Recipe Post is Meatless Monday and really any weeknight perfection. These Sweet Potato and Black Bean Burgers are courtesy of one of my favorite food bloggers, Sweet Phi, who has nailed accessible, lovely, completely delicious meals.
These burgers are a perfect example of this. Simple, clean, colorful, healthy, easy to make, packed with flavor, and quick! Tell me something else you need from a recipe?? You can’t. That’s it.
The sriracha mayo is the perfect schmear to tie the whole sandwich together, but regular mayo makes it kid-friendly (or just less spicy) and still delicious.
Oh man. You’re going to want to bathe in this sauce. Seriously, consider yourself warned. Tonight’s Not My Recipe post is Hip2Save’s White Chicken Enchiladas with (aforementioned dangerously amazing) Sour Cream Sauce. Simple ingredients, just a few steps, ooey-gooey-cheesy-goodness. Oh, AND THE SAUCE. On the day I decide to give up and that healthy eating serves no point because End of Days, I will eat this sauce on everything until it’s over.
This has comfort written all over it. And it’s completely easy to make – nothing fancy and no extra-special skills required to pull it together. It’s just all good. That’s it. Good with a capital G. GOOD with all caps. This is not my recipe, sadly. But holy moly do I wish it were.
Who doesn’t love a one-pan meal?! Tonight’s Not My Recipe Post is this one pan winner of flank steak, potatoes, and veggies. It’s easy, and quick, and packed with impressive seasonings and flavors that will trick you into thinking it’s complicated and slow-cooked instead.
It’s also simple enough ingredients-wise that there’s something there for everyone, including a pickier or plain-preferring eater. My kiddo claims only to like raw red peppers and pickled onions (????), but broccoli she’ll eat no matter what, so I could easily parse out the stuff she’ll actually eat without messing up the meal or presentation.
All in all, I have no complaints at all, and I didn’t need to change a thing about this recipe to make it work for my timing or my eaters! Not my recipe, but I wish it were!
I’m going to start a new feature for sharing those recipes I don’t modify or adjust or tweak or rearrange at all because they’re just right as they are. I love in the blogging community all the cross-posting love an support that goes around among bloggers. People are so respectful and encouraging of each other’s work and creativity. I always hyperlink the original post when a recipe isn’t my own or when my modifications are so minor that it’s really still the inspiration recipe with a twist, but this is a little more–a direct tip of the hat, because this blog is about making good food on a regular basis, which means when I find other healthy, clean, beautiful, weeknight-friendly recipes, I think they deserve the recognition, don’t you?
Tonight’s Not My Recipe is this Seared Salmon with Creamy Cilantro Lime Sauce. I’m not sure at all how I stumbled on Cooking Classy, but I’m loving her posts. Easy but flavorful recipes that are totally achievable on a working weeknight and totally beautiful food photos, which is always a hook in my book!
This dish ticks all those boxes. Very simple, straightforward recipe with just a few steps and fresh, healthy ingredients. And a completely palate-popping flavor that will make you eat too quickly! Bright and crisp and delicious in every way, and easy and healthy to boot. Not my recipe, but I wish it was!
