It’s the first Friday of the month – and of the new year! So the last month has really been full of treats, edible and otherwise. Between travel, holidays, school/work vacation/staycation, and general indulgence, we did good.
Tonight’s dinner was another one-pot favorite, but it’s a repeat recipe, so I don’t have a recipe post for you. It’s a good one, though, and a perfect weeknight fix that checks the essential boxes:
hearty and filling
simple, accessible ingredients
fresh and healthy
easy to prep and kid-friendly
ready and on the table in under 30 minutes

I’ve done three beautiful and delicious one-pot meals this week, and I have another lined up for tomorrow. On a busy weeknight, they’re the best. They’re convenient and efficient both for food prep and clean-up. You can make a complete, savory, and balanced meal for your family in one pot. What could be better, really? Don’t underestimate how much flavor and variety you can cook up in one single pot.

Before I get to the recipes, I just wanted to say thank you for your patience with me, and for sticking around! I’m back, and planning to post regularly again moving forward. While I figure out some new approaches, and hopefully some new designs and formats, I’m also going to mix up my original posting schedule a bit. Tuesday-Thursday, most Fridays: recipes weeknight meals; quick and easy to make, even after a long day of work/school/life, but still healthy and full of flavor
First Friday: Recent Treats – replacing my Weekend Treats posts from the past, these will
recap some dining out/general life enjoyment highlights
Features: Occasionally I’ll mix it up by inviting a friend to share a recipe, or posting a recipe made by or with heavy assistance from My Tiny Sous Chef
