Changed it up this week and made it Meatball Monday, which is basically the exact opposite of our traditional Meatless Monday. Is Meatball Monday a thing? It should be. Start with these. They’re simple and straightforward. No frills. Just your basic Meatball. But they’re not basic at all. They are perfectly simple and straightforward. And perfectly frill-less. Flavorful, moist, fool-proof guaranteed crowd pleasers. And as a bonus, they’ll be ready in 25 minutes or less! Here you go.
WHAT YOU NEED
* 1lb ground beef (I use 85/15)
* 1 egg
* 1/2C milk
* 1T grated parmesan cheese
* 1/4C Italian seasoned breadcrumbs
* 1/2t garlic powder
* 1/2t onion powder
* 1/2t kosher salt
* 1/4t black pepper
WHAT TO DO
Preheat the oven to 450F and line a baking sheet with foil. Spray with nonstick spray and set aside.
Careful not to overmix, combine all the ingredients together in a large bowl by hand.
Form the mixture into approximately 1-inch meatballs and place them on the prepared baking sheet. Mixture should yield about 21-24 meatballs.
Bake for 12 minutes. Then add the meatballs to a pot on the stovetop and cover with your favorite sauce (homemade or jarred-doesn’t matter). Heat over medium-low until the sauce is warmed up.
Serve over rice or pasta and top with grated Parmesan and a pinch of crushed red pepper.
