STOP THE PRESSES! This is hands-down one of the easiest weeknight dinner wins I’ve ever given you! I’ve seen lots of everything-for-a-dinner-on-one-sheet-pan dinners around the Internet, and decided I ought to give it a try. You know I love me a one-pot meal — why not a one-pan meal, right?? Right. Righter than right. This is PERFECTION. You could definitely use a different fish, and swap out other veggies, but I’m going to give you this delicious meal we had tonight, and then you can decide what to do from there. It’s better than good. This is great, as I mention, for a healthy weeknight meal, but it’s also oh-so-pretty and presentable, so it would also be a great impress-the-guests meal that doesn’t actually take much out of you to pull together. How great is that? OH! And did I mention it’s completely ready from prep to table in UNDER 30 MINUTES??? Would I lie to you? Would I steer you wrong? No, I would not. Not ever. Here you go.
WHAT YOU NEED
* 1/4C unsalted butter, melted
* 4t minced garlic
* juice of one whole lemon
* 1t Italian seasoning
* 4 6oz salmon fillets
* ~1lb (or about 2-3 smaller heads) broccoli, trimmed down to florets
* 1 pint grape tomatoes
* olive oil
* salt and pepper to taste
WHAT TO DO
Preheat your oven to 425F and lightly spray a baking sheet with nonstick spray.
In a small bowl, mix together the butter, garlic, lemon juice, and Italian seasoning. Set aside.
Place your salmon fillets side by side on one end of your sheet pan. Place your tomatoes next to them in a single layer. Place your broccoli florets next to the tomatoes, filling up the rest of the baking sheet also in a single layer. Drizzle the vegetables with olive oil – about 2-3 tablespoons for each vegetable grouping – and then sprinkle with salt and pepper to taste. Pour the garlic butter mixture over the fish, spreading it out evenly so that each fillet gets about an equal distribution of the garlicky goodness.
Bake about 13-15 minutes until the fish is cooked through and flaky and the vegetables have softened and roasted lightly. Serve immediately. Garnish with a little extra wedge of lemon or a sprinkle of fresh chopped parsley if you like. Enjoy!
