Tuna and Potato Burgers

My love of anything burger-like is well-documented. These are a different take on a fish burger. The addition of mashed potato to the patty gives it both a nice heartiness and a more substantive texture. Also, they’re healthy, quick, and inexpensive-ding! ding! ding! Here you go.

* 1 medium potato, peeled, steamed/boiled, and mashed
* 3T light mayonnaise
* 12oz chunk light tuna packed in water, drained
* 1 egg white
* 2 green onions, chopped
* 2T breadcrumbs, plus more for light coating
* 1t garlic salt
* 1/2t lemon pepper
* olive oil

Boil or steam your potato (A quick shortcut if you’re tight on time is to pierce it several times with a fork, then place it in a bowl or dish with a little water and microwave it for 5 minutes. The peel comes right off and you can mash it up and keep going right away.).

tunapotatoburgers1While that’s happening, mix together the mayo, tuna, egg white, green onions, breadcrumbs, garlic salt, and pepper in a bowl. Add the mashed potato and mix thoroughly to combine.


Pour some more breadcrumbs into a shallow dish.

Form the mixture into six patties and coat lightly in the additional breadcrumbs on both sides.

Heat a little olive oil in a skillet over medium heat. Place the patties in the oil and cook about 3 minutes per side, until they are lightly browned. Serve with a squeeze of lemon on a bun with leafy romaine lettuce. Delish! Fast! Easy! Winner winner, tuna potato burgers for dinner!
