Sun Dried Tomato Basil Sauce

When my husband saw “whole grain penne” on the shopping list this week, he groaned. And mocked. But when I served dinner tonight, I don’t even think he remembered he was supposed to make fun of me, because the sauce was so delicious. Mwahaha! This flavorful, delicious sauce is crazy-easy to make, which, as you know, is about as good as it gets in my book. I served it over whole grain penne with chunked chicken sauteed in light olive oil, but it would go well with basically anything to which you’d add a jarred sauce under normal circumstances, so go nuts! Anyway, here you go.IMG_5975

* 1 14.5(ish) oz can low sodium tomato sauce with no sugar added
* ~1C sun dried tomatoes – dry, not in oil
* 2C fresh basil
* 3-4t garlic powder
* 1/2t sea salt
* 1/8t red pepper flakes (or more, depending on your preference, but I was cooking for 3 eaters, one of whom is under 4 years old, so…)

Add all of the ingredients to a blender or food processor and pulse gently to begin breaking down the sun dried tomatoes, then blend until all of the components are well-integrated and you have a nice, chunky sauce. BOOM. You made sauce. And a dang good one, I might add!

If adding to pasta or meat, I recommend adding it directly to the pan in which you’re cooking, and simmering for a few minutes to incorporate the flavors and bring the temperature up on the sauce. Then serve and enjoy.

Easy-peasy, right?
