This is what happens when you think you’re brilliantly inventing a burger inspired by Chicken Parmesan, and then you figure out you bought ground turkey, and you forgot to buy tomato sauce. My guess is it would be equally delightful with ground chicken and sauce, but today I’m talking about my invention: the Italian turkey cheeseburger. Here you go.
WHAT YOU NEED
* 1lb ground turkey
* olive oil
* 1/2C finely chopped sweet onion
* 1/2C finely chopped red pepper
* 3-4t minced garlic
* 2 green onions, finely chopped
* 1/2t salt
* 1/2t pepper
* 1t dried oregano
* 1 1/2t dried basil
* sliced mozzarella cheese
WHAT TO DO
Heat a little olive oil in a pan over medium heat, add the onions (sweet and green) and red pepper, and saute until they begin to soften, then add the garlic and stir through, then remove from heat and set aside to cool.
Combine the rest of the ingredients, except the cheese, then add the cooled onion/pepper/garlic mixture and mix by hand to combine completely. Form the mixture into four evenly-sized patties. Heat a bit more oil in a pan and fry your burgers, about 4-5 minutes on the first side, and 3-4 minutes on the second, until cooked through.
With about a minute left, add a slice of cheese to top each burger, turn off the heat, and cover the pan to let the cheese melt down.
