Meatless Monday: Veggie Burrito Bowls

If you put the right pieces together in a meatless dinner, it should not feel like a side dish. I promise. This quick, easy, flavorful veggie burrito bowl is packed with the good stuff. Nothing processed, just the good stuff. And it’s filling and beautiful and colorful and delicious. And definitely *not* a side dish. (Can you tell I’m trying to build an argument?)

Anyway. Here you go:

* brown rice (or white, but I used brown)
* 1T sunflower oil
* 1 small sweet onion, diced
* 4  green onions, chopped thin* 5-6 cloves minced garlic
* 1 red bell pepper, chopped into tiny pieces (use any color pepper you prefer)
* a pile of cherry or grape tomatoes, halved
* 1.5t paprika
* 1t chili powder
* 1 14.5oz can black beans, washed and drained
* 1C frozen corn
* salt + pepper, to taste
* shredded cheddar jack cheese (or any cheese of your choosing)
* 1 ripe avocado, chopped
* fresh chopped cilantro (can use parsley, too)

Cook the rice according to package instructions. While that’s happening, heat the oil in a deep skillet, and cook the onions, garlic, and pepper over medium heat, about 5 minutes. Then add the tomatoes, paprika, and chili powder and cook just a few minutes, until the tomatoes begin to soften, then use a spoon to smush up those babies a bit to let their juices out. Add the beans and corn and season with salt and pepper, to taste. (It’s smelling so good up in your kitchen at this point, just FYI).

Add the cooked rice to the pan and stir it through. Add a bit of water if the mixture is a little too dry. Let this all come together and warm through, then serve, topped with chopped avocado and a generous sprinkle of shredded cheese (which should melt over the top of your bowl – magic and delicioso!). Finish with a bit of chopped cilantro and there you have it.


Hearty, tasty — and filling! *NOT A SIDE DISH* (I’m making that a hashtag…)
