Simple Roasted Broccoli with Parmesan

The easiest veggie dish ever, and it packs a whole lot of flavor power. Just a few simple ingredients, and a few simple steps, and you’ve got a legit palate pleasing side dish that takes barely any time to prep, and cooks while you prepare the rest of your meal. What more could you ask for? Here you go.

* 1 medium-sized head of broccoli
* ~3-4T olive oil
* Kosher salt
* lemon pepper
* grated Parmesan cheese

Don’t blink here – you’ll miss the whole thing! No, but seriously, this is amazingly basic for the outstandingly flavorful outcome.

Preheat your oven to 400F.

Cut the end off of your broccoli stem, then cut down into florets, retaining some of the individual stems so you have small broccoli “trees” when you’re done.

Cut each “tree” in half, so that you can lay each piece flat on a baking sheet.

Do just that – lay the broccoli out flat on a baking sheet. Drizzle with olive oil, and sprinkle with just a few healthy pinches of salt and pepper.

When your oven is ready, roast the broccoli for about 20 minutes. After about 15 minutes, give the baking sheet a little shake, before finishing it off for that last 5. Then remove from the oven and sprinkle with Paremesan cheese. Serve immediately so it stays nice and hot!

So easy, so delicious. It’s basically perfect. Note: this amount yields a small bowl for a small side. I would recommend doubling for any more than 2 adults and a picky toddler. (Really, I might just double it anyway… I could eat an entire bowl on my own.)
