A Quickie: Taco-Seasoned Roasted Cauliflower

When I picked our daughter up from preschool today, I asked her what she wanted for dinner. Without even hesitating, she listed the following ingredients/directions:

  • chicken
  • tortillas — with the chicken in the tortillas
  • bread (…)
  • apples
  • cauliflower

I thought for a moment, and then came up with a plan… Chicken tacos was the obvious conclusion. She could certainly have sliced apple on the side. But the cauliflower?? Not the veg I’d really naturally be inclined to pair with tacos. But she wasn’t budging. So we picked out a big ol’ head of cauliflower at the store and I decided something would come to me, and we should go with it. She was insisting on cauliflower, for crying out loud!

Well, something came to me, and it really worked out. And it’s so easy. Four ingredients, two steps, 20-25 minutes tops. Here you go.

WHAT YOU NEED
* 1 large head of cauliflower
* olive oil
* 1/3 packet of taco seasoning
* 1 lime, juiced

WHAT TO DO
Preheat your oven to 350F.

Cut your cauliflower down into florets and place in a large bowl. Drizzle enough olive oil over the bowl to cover, but not coat, the florets. Then add the taco seasoning and toss to distribute. Pour the cauliflower onto a sheet pan.

Roast at 350F for 15 minutes, then toss and roast another 5-10 minutes. Serve.

Bada-boom. And that, my friends, is how you pair cauliflower with tacos.
