Quick Tzatziki

Oh, you guys. You’re welcome. I know I’ve said this about a few things, but seriously, if you don’t like tzatziki, we might as well part ways now. Tzatziki has everything good, and that’s not just my quarter Greek roots talking! Cucumber, yogurt, GARLIC, dill. I mean, seriously right now. It’s also basically among the easiest things ever to make, and it is perfection for summer. Tzatziki is a traditional Greek sauce generally served alongside grilled meats or as a dip for pita or veggies. But you can basically do anything with it, because it’s freaking awesome. So… here you go.

* 2-3 large cucumbers, peeled, seeded, and diced up tiny
* ~1T Kosher salt
* 2C plain Greek yogurt
* 1/2C sour cream (optional, but delious)
* 1T white vinegar
* juice of one large lemon
* 1T olive oil
* 2t (heaping) minced garlic
* 2t chopped fresh or 1 1/2t dry dill
* black or lemon pepper, to taste

Start with your cucumbers. Peel and then seed. A great trick for this is to use a small teaspoon or melon baller – just cut your peeled cucumbers in half lengthwise and then run the spoon down the inside to scoop out all the seeds easily. Next, dice your cucumbers. You want most of the cucumber pieces to be tiny, but a few chunkier bits here and there are also great for texture, so just roughly dice.

Scoop those cucumber bits into a strainer and sprinkle the Kosher salt right on top. This will draw out as much of the water from them as is possible, which is essential to keeping your tzatziki nice and thick and not runny. Let the water drain out over the sink while you prepare the rest.

Add the remaining ingredients (yogurt, sour cream, vinegar, lemon juice, olive oil, garlic, dill, pepper) to a bowl and mix them all together until blended.

If your cucumbers released a lot of liquid, you may want to pat them off on a few paper towels to make sure you get all the water. If they only released a little (Persian cucumbers, for example, are not as liquid-heavy), you can skip this step. Add your cucumbers into the bowl and mix through completely. Taste and adjust seasonings to your liking. Then dip right in!
