First Ever Family Movie Night + Loaded Nachos for Dinner

We held our first ever Family Movie Night last Friday. It was adorable and delicious. In honor of our daughter’s finally mastering an attention span long enough to watch a whole movie, we let her pick the movie we’d watch, and I made a big old batch of outrageously good loaded nachos and that’s all we ate and it was glorious.

It’s not a big fancy recipe or anything – you just get all the ingredients and layer them together, but the result is so gooey-good, you just have to see it come together. Here you go.

* a bag of nacho chips of your choice
* ~1lb ground beef
* ~2/3 of a package of taco seasoning
* 1 can pink beans, drained and washed
* 4 small tomatoes, diced (I used kumato tomatoes – YUM)
* 1 small can black olives
* 4 green onions, green parts only, chopped
* 2 ripe avocados, diced
* Greek yogurt for topping, optional

Preheat the oven to 300F. Heat a pan over medium heat and cook the meat until it completely browns, constantly breaking it up with a spoon or spatula to ensure it completely breaks up into crumble-sized pieces. When it’s cooked through, drain the meat and then sprinkle the taco seasoning over it and mix it through to coat.

Now just layer it all up (duh). Fill the baking dish with the chips, and then pour the meat over the chips.

Add about 2/3 of the diced tomatoes, and the beans.

Add the black olives, and then the cheese and about 2/3 of the chopped green onions.

Bake this beautiful mess for about 10 minutes or so, just until the cheese melts. Then top with the avocado and the remaining tomatoes and green onions, and put it in the middle of the table and dig right in. Top with a scoop of Greek yogurt if you like. WHAT?! Yeah.
