Turkey Sloppy Joes

My husband was away Memorial Day Weekend, which meant my little buddy and I had a girls’ weekend! We did all kinds of things, including meal planning. And when I asked her what she’d like for dinner that week, she said, “…um… something with turkey!” So we started listing ideas and looking at cookbooks and Pinterest until something sparked her interest, and what she landed on was Turkey Sloppy Joes. The recipe I adapted came from the cookbook, 1000 Lowfat Recipes (Amazon), which I picked up at a used bookstore long ago, and which has turned out to be one of my favorite cookbooks to consult when a craving hits. Every single recipe I’ve made from this book has been a total success, and that also means you’d never know it was from a lowfat cookbook. Fabulous, powerful flavor in every recipe. This was no exception. When I made it, I did NOT tell my husband where it came from, to avoid some eye-rolling, and he loved it. AND. Major kid-friendly win. Additionally, I had almost every ingredient on-hand, so it required minimal shopping, which is always a quiet victory.

So without further ado, here you go.

WHAT YOU NEEDturksloppyjoe.1
* 1lb lean ground turkey
* 2t vegetable oil
* 1C chopped onion
* 2 cloves minced garlic
* 1 green bell pepper, chopped
* 1 rib celery, chopped
* 1 15oz can tomato sauce
* 1.5T Worcestershire sauce
* 1/2t dry mustard
* 1t kosher salt
* 1t ground chili pouder
* 1/8t cayenne pepper
* hamburger rolls

WHAT TO DO
In a large pot, cook the turkey until it’s completely browned. Drain off any fat or liquid, and remove the turkey from the pot. Set aside.

Add the oil to the same pot, and heat it over medium heat. Add the chopped onions and saute until they begin to soften and turn golden in color. Then add the garlic, bell pepper, and celery. Cover, and cook until all the vegetables are softened, stirring occasionally.

Next, add the turkey back into the pot. Add the tomato sauce and seasonings and simmer, uncovered, for about 15 minutes or so, stirring occasionally, until the sauce thickens up a bit (mmmmmm….).

Dinner is served. Doesn’t everyone love elevated cafeteria throw-backs? No, seriously, this is delicious and comforting and hearty. And quick and filling on a weeknight. Self-high-five!
