Cucumber + Strawberry + Feta Salad with Poppy Dressing

This salad has replaced my summer potluck go-to (watermelon-basil-feta). It’s bright, it’s fresh, it’s simple, it’s beautiful, and it’s perfect. It’s summer in a bowl! And bonus – fantastic dressing recipe you can put together in a flash!

Let’s get to it, then, shall we? Here you go…

WHAT YOU NEEDcucstrawfet3
For the Salad
* 2 large cucumbers, sliced super thin (or spiralized)
* ~4C sliced strawberries
* ~4oz crumbled feta cheese

For the dressing (makes way more than you need, but who doesn’t like extra dressing??)
*3/4C white vinegar
* 1.5C canola oilcucstrawfet9
* 3/4C sugar
* ~2T chopped onion
* 1 1/4T salt
* 3/4t dry mustard
* 1.5T poppy seeds

WHAT TO DO
Prepare your cucumber and strawberries first. If you have a means of spiralizing your cucumber, go nuts. But you don’t need one (I don’t have one). Just slice your cucumbers super thin.

Place your cucumber and strawberry slices in a bowl (strawberry slices should be a bit thicker – more like chunks), and top with feta crumbles.

To make your dressing, place all of the ingredients except the poppy seeds in a blender.

Blend on high for a minute or two – long enough to ensure the onion is completely broken up and emulsified into the dressing. It will look beautifully creamy.

Add the poppy seeds and pulse just a few times to combine. Transfer your dressing to a container and refrigerate until serving.

Note: Both cucumbers and strawberries contain a lot of liquid, and are therefore prone to sogginess. Dress your salad just before serving, or else you’ll end up with a soppy mess. And a little bit of dressing goes a long way.

(P.s., I actually found a photo of this salad somewhere on the Internet and pinned it to remind me to make it later. But the post I saw used a prepared poppy dressing, which is also fine. I just love this recipe, and it’s so easy and fast, I figured making it myself was a no-brainer. But truthfully, any light, bright, slightly sweet dressing you like would work great with this salad, so do your thing… and enjoy!)
