I thought I would give you a quickie delicious side I threw together earlier this week. It’s so simple, but so powerfully deep with flavor. I seriously could have eaten an entire head of cauliflower by myself, without even noticing. I was popping cauliflower like… let’s go with popcorn. You want it, don’t you? Here you go.
WHAT YOU NEED
* 1 head cauliflower, cut down to florets
* olive oil (afterthought: next time I will make this with coconut oil, which would be fabulous)
* lemon pepper
* wedge of lemon
WHAT TO DO
Heat some olive oil in a pan over medium heat (enough to cover the bottom of your pan), then add the florets. Saute for about 5 minutes, tossing pretty constantly, until the cauliflower gets a little char going.
Season with the cumin, paprika, and lemon pepper to your liking, then saute another 3-5 minutes to let the seasonings really come together and allow the cauliflower to cook all the way through and really char up.
Squeeze a little lemon over the top and serve hot.
