This is a good one.
Earlier in the day, my husband sent me a text: I’m having the knives sharpened and they may not be ready today in case that affects your dinner plans.
No knives? I like a challenge. All I needed was something I could put together that required no chopping whatsoever. No chopping? No problem.
WHAT YOU NEED
* prepared pizza dough (you can get this at most grocery stores; I used Trader Joe’s garlic and herb variety)
* 1 container pesto sauce (or, if you have time, make your own – it actually requires no chopping!)
* sliced mushrooms
* pre-cooked chicken breast (I used Trader Joe’s ‘Just Chicken’)
* fresh basil
* shredded mozzarella cheese
* grated Parmesan cheese
WHAT TO DO
I’m pretty proud of my problem solving skills on this one. Not only did it require zero chopping, but it was quick, on the healthy side, and super kid-friendly. You ready for this? Here you go.
Preheat the oven to 350F.
Flour a working surface and and a rolling pin, and roll out the dough to about a 12-inch round. Place it on a lightly-floured or cooking sprayed pan or a pizza stone sprinkled with cornmeal.
Distribute your toppings around your pizza. Tare the chicken pieces by hand, and of course, use pre-sliced mushrooms. Easy. Hand-shred several large leaves of basil and then shake grated Parmesan over the toppings.
Place your pizza in your preheated oven and bake for 12 minutes. Then turn off the oven, turn the broiler on low, and broil for just 3 or 4 minutes to finish it off. Let your pizza sit out for a few moments to let the cheese just set, then slice away and serve.
