One thing we really miss since moving to our new house in a completely new neighborhood last year (besides our beachfront condo and incredible lake views) is the convenience of spontaneous access to some of our favorite take-out spots. Last week I was up in our old ‘hood for a hair appointment and realized I was right around the corner from one of our old go-tos, an amazing little Lebanese grocery with an incredible selection of pretty special goods, including fresh salads and dips, imported feta, fresh-baked pitas, and homemade savory pastry. So I took a detour and picked up a whole bunch of treats and then let that inspire dinner. Chicken gyros with cucumber/feta/dill salad and grape leaves… hello?! I used the chicken portion of this recipe as inspiration. Here you go…
WHAT TO DO
In a medium-sized bowl, combine everything except the chicken, and whisk together until well blended.
Remove from heat and cut into smaller pieces for serving. I served mine with warmed-up fresh pitas, sliced tomato and red onion, and, of course tzatziki sauce. Tzatziki is not hard to make, but it’s easier to buy. And when you know you are getting fresh, authentic goods, just buy it – duh! Vegetable stuffed grape leaves and a small salad of chopped cucumbers with chunked feta, olive oil, lemon juice, and dry dill perfectly completed the meal.
Delicious, healthy, fast, fresh. How much better can you get? Bonus highlights include the discovery that our kid loves stuffed grape leaves and tzatziki! Someone book me a trip to Santorini (I mean us… book us a trip to the Greek Islands).
