Roasted Sweet Peppers


I made these over the weekend and they were easy, fast, and super delish. They made a great side addition to our dinner of grilled steak, salad, and corn, but they are also a great little snack, and they keep really well, so we’ve enjoyed them for a few days already. Easy + lasting power = no brainer.

Here you go…

* 1-2lbs sweet mini peppers (most stores carry these in bags of mixed red, yellow, and orange peppers)
* some olive oil
* 3/4t salt
* 1/2t pepper

Heat the oven to 425F. Place all the peppers on a baking sheet, then drizzle with olive oil to cover them evenly. Sprinkle with salt and pepper, and finally, shimmy and shake the baking sheet around a bit to make sure everything gets disbursed evenly or thereabouts.

Pop those bad boys in the oven and roast for about 20 minutes, taking them out (once or twice) to flip them. That’s it! That’s all you have to do… and THEN… you get these:

They are sweet, they are pretty, they are good right out of the oven and they are good cold, they are delicious on their own, their good in a salad, they’d probably be great on a cheeseburger… Can’t go wrong. Also, aren’t they so cute?
