This is a great meal for a busy weeknight. It takes under 30 minutes to get on the table, and covers all the bases: protein, veg, comfort, and delish, with a kid-friendly bonus! I’ve mentioned before that color is apparently the parental secret ingredient to getting veggies into toddlers. This is a great opportunity. Each colored pepper has a different taste raw and cooked, which is a fun way to introduce not just the veg, but also the idea that cooking transforms ingredients, to little ones. Plus, it’s just straight up basic good food. So do you really need convincing? Here we go…
WHAT YOU NEED
* Sausage of your choice, in the quantity that works for you. On this night I used uncooked chicken sausage, but I’ve used every kind available, and it always works out, so go with your favorite.
* One pepper each of all the colors (Green, Red, Yellow, Orange… if you find Purple, let me know – that will kill in this house!), sliced
* One large onion, sliced
* Brat buns
* Olive oil
* Salt + Pepper
WHAT TO DO
This is so straightforward, you’re probably already laughing at me for posting it. Whatever, I don’t care. It’s Friday and I can’t decide what’s for dinner, so I’m writing about food. Give me a break!
Start by slicing up your onion and peppers. Put some olive oil in a pan and heat on medium, then toss in your onions first, let them absorb some oil and start to soften then add your peppers. Mix thoroughly and let them do their thing in there.
Meanwhile, heat a small amount of oil in another pan, and place your sausage into it. Keep the heat on the medium-low side, and let them cook, turning occasionally to get a little brown on all sides. Mmm…
When your veggies are softened up a bit, and your sausage is browned nicely all around, add the sausage into the pepper/onion pan and mix thoroughly, letting everything finish cooking together, melding flavors nicely. Season with salt and pepper to taste, and again, let them do their thing for about 5 minutes.
I also like to serve salad with just about every meal, so I threw together a simple salad of mixed arugula/spinach, cucumbers, and blackberries, with a little olive oil and white balsamic, and there you go:
A beautiful, complete meal in under a half-hour! Can’t be beat! Oh – another successful trick in our house: add fruit to salads and the kid will try more than just the fruit! This meal taught us (her) that she in fact does like yellow and orange peppers (apparently they taste like “yummy”), and that blackberries are not her preferred berry (only ate the cukes, oh well!). See, everybody’s learning. And eating!
